The IW Vermont Difference
We are committed to the farm-to-table culinary philosopy.
During the height of the season, 90% of what we serve is grown or raised within a 25-mile radius of the Inn. We also grow what we don’t buy from our farm partners, starting with heirloom seeds inside under grow lights. At the end of each season, we stock our root cellar so it carries us through the winter.
We break down whole lambs, pigs and quarters of beef to use every part of the animal. Vegetable scraps are composted and lime and lemon peels are recycled into cleaning products for the Inn.
If food isn’t prepared this way then it defeats the purpose of a true foodie menu. We don’t do tastings because we cook in season. Instead, we kindly invite you to come and try our cuisine, you won’t be disappointed!
The Hidden Kitchen
We are known as one of the leaders in Vermont’s farm-to-table movement. Our food philosophy is simple – be authentic, use the freshest ingredients possible and eat local. Your wedding menu will delight your guests with Chef Michael Ehlenfeldt’s culinary expertise.
We know our farmers by name. For most of the year, over 75% of our ingredients come from within a 25 mile radius of the Inn or from our on-site heirloom vegetable garden.
“Chef Michael really does a wonderful job. We had a salad at my wedding reception that EVERYONE is still raving about. And the veal, house made ice cream, soup... everything was just perfect."
“Chef Michael is an absolute genius. He worked with us to create the most personal, amazing, and thoughtful menus for each meal. Every ingredient was chosen with care to honor the location, the season, and to make things just plain yummy. “
